We are enjoying lots more outdoor time, and eating meals in the garden, this week was quinoa salad, and we had our first bbq of summer yesterday! Halloumi, courgette and red pepper skewers, they were scrummy!
Halloumi Skewers
2 medium courgettes
1 large red onion
1 large red pepper
1 block of Halloumi cheese
1 tbsp olive oil
2 tbsp lemon juice
2 tsp fresh thyme
1 garlic clove crushed
½ teaspoon fine sea salt
Freshly ground black pepper, to taste
Quinoa Salad
1 cup uncooked quinoa
2 cups water
1 medium cucumber
1 medium red bell pepper
1 small red onion
1 cup finely chopped flat-leaf parsley
¼ cup olive oil
¼ cup lemon juice
2 cloves garlic
½ teaspoon fine sea salt
Freshly ground black pepper, to taste
